Chef Polo has dedicated more than 20 years to the kitchen trade. He started his career in the city of La Paz, Baja California SUR over a decade ago. His inclined style expands Mexican-Mediterranean cuisine, International cuisine, desserts, and loves to make baked goods.
Chef for a Lifetime
For 9 years Polo was the corporate chef at the famous “Club Regina” based in Puerto Vallarta. Over time he was promoted to the manager of Food & Beverage for all properties in Los Cabos, Puerto Vallarta, and Cancun.
Chef Polo moved back to Los Cabos to start as a restaurateur opening his own in April 2018 called “The Blue Desert.” His focus was on creating a culinary experience and saw the opportunity to bring luxury cuisine into the catering, private chef and butler services. These are the same services that he’d previously carried with DMC Cabo Travelers Advisors.
Polo’s career has afforded him opportunities like Las Ventanas al Paraíso as the starting chef. In hotel Casa Natalia as executive chef and, is currently the exclusive chef of a luxury Cabo San Lucas yacht.
